After relocating from chilly Chicago, the extended Cuccia clan built an open-air produce stand, with French dip sandwiches, to cater to travelers between Los Angeles and Palm Springs, which opened for business in August of 1945. After two months or so, son-in-law George Licali was at the six-stool stand eating a plate of spaghetti and meatballs prepared at home by matriarch Rose Cuccia when a customer asked if that dish was on the menu. It wasn’t, but a plate was prepared rather than disappoint a customer. As the spaghetti caught on, Cuccia had to lug pots to the stand from her house on the corner. An onsite kitchen was built and Vince’s, named for the brother with the most Italian name, became primarily a spaghetti house. Now we’re almost 80 years of making fresh and in house recipes in the same place it started !
